Craw Daddy's Caesar Salad

 

 

 Dressing

 

 4 or 5 cloves of garlic, pressed

 squirt of anchovy paste

 juice of ½ lemon

 2 TBL red wine vinegar

 2 tsp Worcestershire sauce

 ½ cup olive oil

 salt and pepper

 dash of dry mustard

 

SALAD

 ½ cup fresh Parmesan cheese, more to taste

 garlic or caesar salad croutons

 bacon bits

 1 head Romaine lettuce, washed and torn into bite-size pieces

 

 Combine all dressing ingredients and mix together thoroughly. Increase     

 Worcestershire sauce, vinegar or lemon juice as needed.

 

 Add croutons and bacon bits to lettuce. Pour on dressing and toss. Sprinkle   

 additional Parmesan cheese on top.  

 

 Enjoy.

 

 

 

 

 

Chicken Cordon Blue

Serves 6
Ingredients:
6 Boneless/ skinless chicken breast
½ -3/4 lb deli sliced Ham
Small block extra sharp cheddar, sliced
2 boxes extra crispy Shake and Bake
3 eggs cracked and whipped
Deep baking dish or jumbo muffin tins
Directions:
Pre heat oven 375
Grease pan with Pam Non Stick Cooking Spray
1. Clean and butterfly chicken breast
2. Place sliced ham and Cheese in middle of Chicken and roll.
3. Roll Chicken in Eggs
4. Dredge in Shake and Bake and place in greased pan.
Repeat steps 1-4 for each breast
Bake 375 for 30-60 mins or until fully cooked

The Dattilio Italian Spaghetti Sauce Recipe
 
Sauté in olive oil one medium/large sweet onion
When the onion is soft , add 10 cans (28 oz each) Crushed Tomatoes (any brand)  on Medium Heat
While the tomatoes are heating add the following ingredients:
 
4 Tbls of Sweet Basil
1 Tbls of Italian Seasoning
1 Tbls of Oregano
2-3 Bay Leaves
4-5 Cloves of Fresh Garlic or more if you so chose
 
Stir the sauce occasionally and reduce the heat to simmer for 3-4 hours to blend in the spices.
You can add in your choice of meat i.e.: pepperoni, ground beef, sausage etc. if you chose
Serve over your favorite Pasta.
This whole process takes only 20 minutes to prepare.
Finish off with a nice bottle of red wine.(off duty)...Enjoy.......
